a. Ingredients:

-1 cup cooked black beans

-1 cup cooked rice

-1/2 cup diced onion

-1/2 cup diced bell pepper

-1 jalapeño, seeded and diced

-1 tablespoon olive oil

-1 teaspoon chili powder

-1 teaspoon cumin

-1 teaspoon smoked paprika

-1 teaspoon garlic powder

-1/2 teaspoon salt

-10-12 inch tortillas

-Optional toppings:

-Salsa

-Guacamole

-Hot sauce

b.Instructions:

Preheat the oven to 350 degrees Fahrenheit.

In a large bowl, mix together the black beans, rice, onion, bell pepper, and jalapeño.

In a small bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, garlic powder, and salt. Add this to the large bowl and mix everything together until it’s evenly coated.

Place about 1/2 cup of the mixture into the center of each tortilla, and then roll it up.

Place the burritos on a baking sheet and bake for 20-25 minutes, until they’re crispy around the edges.

2. Creamy Vegan Potato Soup

This soup is hearty, comforting, and oh-so-delicious. It’s perfect for a chilly winter day and can be easily made in the Instant Pot or on the stovetop.

a.Ingredients:

-1 tablespoon olive oil

-1 onion, diced

-3 cloves garlic, minced

-6 cups vegetable broth

-4 large potatoes, peeled and diced

-1 cup carrots, peeled and diced

-1 cup celery, diced

-1 teaspoon dried thyme

-1/2 teaspoon salt

-1/4 teaspoon black pepper

b.Instructions:

If using the Instant Pot: Turn it to the “saute” setting and add the olive oil. Once it’s hot, add the onion and garlic and cook until soft. Add the rest of the ingredients, give everything a good stir, and then secure the lid. Cook on high pressure for 15 minutes.

Once the timer goes off, let the soup naturally release for 10 minutes before carefully releasing any remaining steam.

If using the stovetop: Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft. Add the rest of the ingredients, give everything a good stir, and then bring it to a boil. Reduce the heat to low and simmer for 30-35 minutes, or until all of the vegetables are tender.

To serve: Ladle into bowls and enjoy!

If using the Instant Pot: Turn it to the “saute” setting and add the olive oil. Once it’s hot, add the onion, garlic, bell peppers, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for about 5 minutes, or until the vegetables are soft.

Add the kidney beans, black beans, diced tomatoes with their juice, and tomato sauce. Stir everything together until it’s evenly mixed.

Put the lid on the pot and turn the valve to “sealing.” Cook on high pressure for 15 minutes. Once it’s done cooking, let the pot naturally release for 10 minutes before carefully releasing any remaining steam.

If using the stovetop: Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell peppers, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for about 5 minutes, or until the vegetables are soft.
