Delicious Healthy Meals – Stuffed Peppers

Preparation time – 10 minutes

Cooking time – 1 hour

Serving – 4

Ingredients

  • Shredded mozzarella – 3 cups
  • Parmesan – 1 cup, grated
  • Marinara sauce – 1 ½ cups
  • Garlic – 3 cloves, minced
  • Breaded chicken – 12 ounces, either fresh or frozen
  • Salt – as needed
  • Black pepper powder – as needed
  • Bell peppers – 4, cut in halves and remove seeds
  • Parsley – 2 tbsp, chopped
  • Red pepper flakes – a pinch
  • Chicken broth – ½ cup

How To Make

  • Preheat the oven at 400 degrees Fahrenheit.
  • Cook the breaded chicken as per the instructions written on the packet and then cut into cubes.
  • Take a large bowl and add 2 cups of mozzarella, ½ cup of parmesan, minced garlic, cubed chicken, red pepper flakes, salt, black pepper powder, marinara sauce and half of the chopped parsley. Mix them very well.
  • Now stuff each half of the bell pepper with this mixture and sprinkle the leftover mozzarella on each.
  • Take a baking dish and pour the chicken broth into it. Put the stuffed peppers in it and cover it with a foil.
  • Insert the dish in the oven and let it bake for about 1 hour.
  • After that, remove the foil and let it boil for two minutes.
  • When done, sprinkle the remaining chopped parsley on the top followed by remaining parmesan and serve.

Ingredients

For Making sauce

  • Extra virgin olive oil – 2 tbsp
  • Tomato paste – 2 tbsp
  • Onion – ½, chopped
  • Crushed tomatoes – 28 ounces
  • Garlic – 3 cloves, minced
  • Balsamic vinegar – 2 tbsp
  • Brown sugar – 1 tbsp
  • Dried oregano – 2 tsp
  • Salt and black pepper – as needed

For Making Cabbage Rolls

  • Cabbage leaves – 15
  • Ground beef – 1 pound
  • Uncooked white rice – ¼ cup
  • Italian bread crumbs – ¼ cup
  • Chopped parsley – 3 tbsp
  • Salt and black pepper – as required
  • Onion – 1, chopped

How To Prepare

First Make The Sauce

  • Preheat the oven at 350 degrees Fahrenheit.
  • Take a large skillet and put it on medium heat. Pour the oil and as the oil becomes hot, add the chopped onions followed by minced garlic and tomato paste. Fry for a few minutes and add the crushed tomatoes, sugar, vinegar as well as oregano. Sprinkle salt and pepper and let it cook on low heat for about 20 minutes.

Making the Rolls

  • Take boiling water in a pot and blanch the leaves in it till they are soft.
  • In a bowl, add the ground beef along with the uncooked rice, 1 cup of sauce, 2 tbsp of chopped parsley, bread crumbs, salt, and black pepper. Mix them thoroughly.
  • Take a baking dish and coat the bottom of it with a layer of the sauce.
  • In the center of each blanched leaf, put a spoonful of the beef mixture and fold it properly so that the filling doesn’t come out. Prepare all the rolls like this.
  • Keep them on the baking dish and insert it in the oven for baking for about 1 hour and 15 minutes.
  • When done, take the dish out and sprinkle the leftover chopped parsley on them and serve.
