4 chicken thighs, deboned and cut in half (skin on)

1 tablespoon soy sauce (or to taste)

For marinate:

1/2 teaspoon Chinese five-spice powder

4 cloves garlic, chopped finely

2 tablespoons light soy sauce (or regular soy sauce)

1 tablespoon Shaoxing wine/Chinese rice wine (get from the Asian market, or sherry is fine too. You can also substitute dry sherry or sake)

1 teaspoon sugar

Freshly ground white pepper flakes to taste

3 tablespoons flour, for dredging chicken pieces

For frying oil:

Peanut oil, enough for deep frying Chicken pieces + about 1 inch around the thighs to be deep-fried

1 3/4 teaspoons rice wine vinegar

2 teaspoons soy sauce

1/2 teaspoon sugar

1. Combine all marinade ingredients in a bowl and mix well. Make sure chicken pieces are coated with marinade then allow it to sit for at least 30 minutes or longer in the refrigerator.

2. In a small bowl, whisk together the flour, remaining soy sauce, remaining rice wine vinegar, and sugar until smooth. Set aside until needed.

3. Prepare oil for deep frying by heating wok over high heat until smoke rises from the surface of the wok (about 500 degrees F). Add about 4 cups of peanut oil into the wok (enough to cover chicken pieces) and heat to about 375 degrees F (use a frying/candy thermometer).

4. Working in batches, drain marinaded chicken pieces from the bowl and place each piece one at a time into the batter mixture, coating well with batter on all sides. Allow excess batter to drip off the chicken before gently placing it deep-frying wok.

5. Deep fry each batch of battered chicken until golden brown. About 6 minutes will do for smaller-sized thighs but check constantly if your oil is hot enough! Remove contents of a wok with slotted spoon or tongs, allowing any excess oil to drip back into wok before transferring onto paper towels, then serve warm with dipping sauce on side..

6. Repeat frying steps with remaining chicken pieces until all are cooked – making sure to maintain 375 degrees F oil temperature for best results.
