How To Make Red Curry Paste For Thai Curry?

The process of red curry paste is quite simple and you can easily cook it at home. In a mortar and pestle add red chilies, red bell peppers, lemongrass, ginger, cumin seeds, coriander seeds, black peppercorns, lemons, salt, shrimp paste, kaffir lime leaves, and shallots and ground them to a fine paste.

Ingredients Required:

  • Red thai curry paste
  • Ginger and garlic paste
  • Vegetable oil
  • Coconut milk
  • Meat of own choice
  • Kaffir lime
  • Fish sauce
  • Brown sugar
  • Red chillies
  • Ginger diced diagonally
  • Steamed rice to serve with


First of all, in a medium size saucepan add a tablespoon of vegetable oil and saute the diced ginger. Similarly, add the ginger garlic place and cook it for 2mins. When the paste starts to cook add 5 to 6 tablespoon of red curry paste and later add 800 ml of coconut milk to the pan. While the curry starts to boil bring down the flame. Stir until the curry leaves some oil on the sides of the pan.

Add some water to the curry depending on one’s required consistency. When the curry starts to boil add the chicken or any meat of the desired choice to the sauce and allow the meat to cook thoroughly. Furthermore, add fish sauce, kaffir lime leaves, and sugar. Add Fish sauce and sugar malt according to our own personal taste. Bring the curry to boil and finish it off with some chopped and basil leaves.

Finally, take off the curry from heat once it has been cooked and serve it hot with steamed rice. It is an excellent dish to enjoy in winter seasons as it is very warm and soupy.
