Spinach Cooking Recipes – Salmon With Cheesy Spinach Stuffing

Ingredients

  • Salmon fillets – 6 ounces
  • Kosher salt – as required
  • Black pepper – as required
  • Cream cheese – 8 ounces, softened
  • Mozzarella – ½ cup, shredded
  • Spinach – ½ cup
  • Garlic powder – ¼ tsp
  • Butter – 2 tbsp
  • Lemon juice – ½ tbsp
  • Extra virgin olive oil – 2 tbsp
  • Red pepper flakes – a pinch

How To Make

  • Take a bowl and marinate the salmon fillets with salt and pepper in it.
  • In another bowl, add the cream cheese, garlic powder, shredded mozzarella, and spinach. Sprinkle the red pepper flakes in it and give them a good mix.
  • Now slit each salmon fillet a little and fill them with the stuffing.
  • Put a large skillet on medium heat and pour the olive oil. As the oil becomes hot, add the stuffed salmon fillets to it. When one side is cooked well, turn it over so that the other sides of the fillets are cooked thoroughly.
  • At last, add the butter along with the lemon juice to the skillet. Let the fillets cook for five minutes more.

Take them out in a serving plate and serve hot.

Spinach Cooking Recipes – Creamy Soup

Preparation time – 15 minutes

Cooking time – 30 minutes

Ingredients

  • Spinach – 1 pound, trim the thick stems
  • Vegetable broth – 4 cup, low sodium variety
  • Kosher salt – as required
  • Black pepper powder – as needed
  • Potato – 1 russet, peeled and cut into cubes
  • Extra virgin olive oil – 2 tbsp
  • Onion – 1, chopped
  • Green onions – 1 bunch, chopped
  • Garlic – 2 cloves, minced
  • Heavy cream – 1 cup

For Making Croutons

  • Butter – 3 tbsp
  • Bread – 1 cup, cut into cubes
  • Kosher salt – as needed

How To Make

  • Put a large pot on medium heat and pour the oil. When the oil becomes hot, fry the chopped onions along with green onions.
  • Add the minced garlic, spinach and potato cubes and fry for about five minutes. Pour the vegetable broth and as it starts to boil, reduce the heat. Let the soup simmer for about 15 minutes so that the potatoes become soft. Season it black pepper powder and salt.
  • Pour the soup in the blender and blend to get a smooth soup. Mix some of the heavy creams and stir well.

Preparing the Croutons

  • Put a large skillet on medium heat and add the butter. As the butter melts, add the cubed bread and sauté for about three minutes. The bread pieces will become golden. Season them with salt.
  • Now mix the croutons with the soup and add the remaining cream on the top. Serve immediately.
