Hong Kong Wonton Noodle Soup is the most famous Asian noodles dish in the world. Its popularity is so huge that it can be found almost anywhere – restaurants, stalls and markets. However, I like to prepare it in the kitchen.

Hong Kong Wonton Noodle soup (makes 4-6 servings) The wonton noodle: 200g King prawns (skinless), in shell, with skins (or 200g) salt, and baking powder. The prawn’s flesh, the skin, and the sauce: About five cups of fish sauce (also called “Kuro Pearl” in Japanese), about two tablespoons of corn starch, two teaspoons of sesame oil, four teaspoons of oyster sauce, and one or two pieces of green onion (depending on how much green onion you like).

When you are done making the sauce, you need to marinate the prawns in the sauce for ten minutes. You can buy “marinated” prawns at any supermarket but I usually cook them myself (just soak them overnight and then marinade overnight). In the marinade, place about one teaspoon of oyster sauce, about two teaspoons of sesame oil, about four tablespoons of corn starch, about three teaspoons of green onion, and about one tablespoon of soy sauce. It is recommended to marinate for half an hour but usually the marinade gets soaked up in the sauce when I cook.
After the sauce is ready, you will place the prawn in a deep, hot (but not too hot), wok. Use a few tongs to press the prawn against the side of the wok until they turn opaque in color. Turn the prawn over and do the same to the other side. After this, pour in the marinade and cover the prawn in it for about twenty minutes or until you see the prawn turn light pinkish in color. Remove the prawns from the wok and keep aside.
Now, you will cut the prawn into bite size pieces and mix them with the marinade. It is a must that you marinate for at least two hours. After two hours, you can serve the soup. As mentioned earlier, the marinated prawn is used to give the sauce a rich taste. Use your favorite dipping sauce to dip the noodles in.
After the noodles are dipped in the marinade, the noodles need to be cooked in a frying pan (for about ten minutes). Drain the cooked noodles well and then add in a little bit of cooking oil to keep them soft. Mix the fried noodles in the marinade once again to keep them moist. Serve with the rest of the marinated sauce and garnish with sliced scallions, chives or cucumber. The dipping sauce is best prepared at room temperature and will also help keep the noodles soft for a longer time.
The final step in preparing the noodles is to add the seasoning into the wonton soup. Use the remaining marinated prawn for this. Mix the marinated noodles in the marinade and then add some salt, sugar, and chilies, to taste.
