Vegetable Recipes in Korean Food

Healthy Korean food is becoming more popular in the United States. This type of cuisine originated in Korea, where there are very few fats in their cooking. The main ingredient in Korean dishes is rice and the emphasis is on vegetables, fresh fish and poultry rather than large meats.

Most Americans have come to love and crave the taste of Korean dishes like bbq pork and seafood soup. But one ingredient that most Americans have not discovered is the healthy ingredients in Korean dish bibimbap. In this article I will introduce you to the vegetables that make up a healthy Korean dish bibimbap.

An Overview

Unlike the highly processed Americanized version of Korean food, authentic Korean food is rich in vegetables. Traditional Korean dishes such as bibimbap contain large quantities of vegetables. There is no question that Americans who live on a diet low in vegetables have been exposed to unhealthy and fatty foods over the years, but these same Americans have come to love and crave the taste of Korean dishes with large amounts of vegetables.

Many of us think of carrots, celery and potatoes when we hear the word “vegetable”. These are only two of many common vegetables found in Korean rice dishes. In authentic Korean cuisine the most common vegetable is the cabbage. Cabbage is rarely, if ever, used as a first course item. Instead the most popular side dish is kimchi, green onions, or spicy fish sauce.

Kimchi, which is raw spicy cabbage, is typically served as an appetizer in many Korean dishes. It is high in calories and is often low in nutritional content as well. One reason why cabbage is so prominently used in Korean dishes is because it contains almost all the necessary vitamins and minerals our bodies need. Cabbage is one of the few vegetables that our bodies need for proper digestion and it also helps support the production of essential proteins like fiber.

Another vegetable common in Korean cuisine is ginger. While I personally do not like the taste of ginger in my Korean food, I know many others who love this condiment and use it liberally in their dishes. Korean dishes that use ginger include some of the most delicious stir fry dishes. Ginger serves as an excellent marinade for beef and chicken, and also adds a great flavor to seafood.

Probably one of the most commonly used vegetables in Korean cuisine is bulgogi. The name bulgogi means “the other gi.” This type of gi is typically made from mung beans, dried corn, and red onion (sometimes referred to as ginseng). Typically, you would not think of bulgogi as being a “healthy” dish but Korean experts have provided a number of healthy recipes for bulgogi that you will be surprised to find are delicious! One of my favorite examples of a healthy Korean dish is called bibimbap, which is a rice salad with bulgogi and vegetables.

As you can see, the key to enjoying some of the most delicious Korean dishes is to learn about how to incorporate vegetables into your diet. Unlike western diets, which can be highly problematic for those with high cholesterol levels, Koreans recognize that the number one health problem in the United States is high cholesterol. By substituting red and green vegetables in place of animal proteins in many of their dishes, they are able to avoid adding unhealthy saturated fats to their diets. 

In addition to bulgogi and bibimbap, there are a number of other delicious traditional Korean dishes that are perfect for people with high cholesterol levels or with conditions like hypercholesterolemia.
