On this happy occasion, we decided to bring to you two people whose contribution towards this growing popularity of Peruvian cuisine is praiseworthy.
Chef Gaston Acurio- Peruvian Cuisine
His restaurant – Astrid y Gaston is fourteenth in the world top 50, Acurio is one of those chefs who functions by creating close, meaningful relationships with farmers, fishermen, and people at the local market. This helps him procure the most fresh supplies for his restaurant. He works together with his wife Pia to serve some of the most exquisite Peruvian meals. From Razor clams to Tunta, this chef goes to extremes to put delicious food on the table.
Acurio has popularised such dishes all around the world, opening outlets in places like Madrid and Bogota. His student, Martinez, headed many of these kitchens under the guidance of Acurio and has now opened his restaurant of Peruvian Cuisine. Peruvian cuisine is famous for its authentic ingredients and is primarily a fusion cuisine with influences from Europe, America, and Asia. Acurio does his best to preserve the sanctity of all his dishes, thereby making his food so popular.
Chef Virgilio Martinez
Having been mentored by Acurio, Martinez is an expert like his teacher. After working as a chef under the guidance of Acurio, he had started his restaurant named Central five years ago, in Miraflores. That very restaurant has today grabbed the fourth position among the world’s top restaurants, making Martinez a sort of poster boy for Peruvian Cuisine.Moreover making them is very easy after you red the dish properly.

The diverse menu at Central has attracted foodies from all around the world today because it has something to offer for all kinds of palate preferences. Martinez was a law student before he left and joined a culinary school in Canada, deciding to chase his passion. He eventually came under the guidance of Acurio who fashioned him into the chef that he is today. Following Acurio’s example, Martinez has now expanded to London and is planning to open a branch in Dubai real soon.
He puts in a lot of research into such recipes and has placed Karime Lopez in-charge of planning Central’s menu. The latter regularly travels to Peru in search of the finest ingredients for Central’s world-famous Peruvian cuisine.
